
Sesame Please Shrimp Vermicelli Noodles

A quick high protein dish with the perfect balance of nuttiness, crunch, and umami!
Ingredients

½ lb rice vermicelli noodles
-
1 lb large shrimp, peeled and deveined
-
2 tbsp tamari soy sauce
-
½ tbsp sesame oil
-
½ tsp black pepper
-
3 cloves garlic, minced
-
¼ tsp salt (adjust to taste)

1 tbsp avocado oil
-
1 cup snow peas
-
½ red onion, thinly sliced
-
4 scallions, sliced into 2-inch pieces
-
1 carrot, julienned
-
¼ cup Sesame Please dressing
-
¼ cup noodle soaking water
-
Chili crunch, for drizzling
-
Fresh cilantro, for garnish
Directions
Soak the noodles
Place the vermicelli noodles in a bowl of water and let them soak for 30 minutes until softened.
Marinate the shrimp
In a bowl, combine shrimp, tamari soy sauce, sesame oil, black pepper, garlic, and salt. Stir well and let it sit while you prep the vegetables.
Cook the shrimp
Heat a wok over high heat, drizzle in avocado oil, and stir-fry the shrimp until pink and just cooked through (about 1-2 minutes). Remove and set aside to prevent overcooking.
Sauté the vegetables
In the same wok, add snow peas, red onion, scallions, and carrot. Stir-fry for 1 minute, then pour in Sesame Please and mix well.
Cook the noodles
Add the drained vermicelli noodles to the wok along with ¼ cup of the soaking water. Stir and let it cook for 3 minutes until the sauce thickens and the noodles absorb all the flavors.
Bring it all together
Return the shrimp to the wok and toss everything together. Taste and adjust with more Sesame Please if desired.
Serve & enjoy
Pile the noodles high on a plate, drizzle with chili crunch, and finish with a few sprigs of cilantro.
