Ingredients
For the Wings:

3 lbs chicken wings, separated into drums and flats

2 tbsp avocado oil
-
2 ½ tbsp baking powder
-
1 tbsp ranch powder
-
1 tbsp onion powder
-
1 ½ tsp garlic salt
-
½ tsp black pepper
For the Brine:
-
1 ¾ cup malt vinegar
-
3 cloves garlic, minced
-
2 tbsp kosher salt
-
1 ½ tbsp ranch powder
For the Sauce:
-
⅓ cup Hot Truff (Scotch bonnet white truffle hot sauce)
-
1 ½ sticks unsalted butter
For Serving:
-
Ranch or blue cheese dressing
Directions
Brine the wings
In a bowl, whisk together malt vinegar, garlic, kosher salt, and ranch powder. Place wings in a Ziploc bag, pour in the brine, remove excess air, and let marinate in the fridge for 30 minutes.
Prep the wings
Remove from brine, pat completely dry. Toss in a bowl with avocado oil, baking powder, ranch powder, onion powder, garlic salt, and black pepper.
Bake
Arrange wings on a parchment-lined baking sheet. Bake at 425°F for 40-60 minutes, flipping every 20 minutes until crispy and golden brown
Toss in sauce
Transfer to a large bowl (seriously, don’t use a small one), pour in half the Hot Truffalo sauce, toss to coat. Add more sauce if you like.
Serve
Plate with ranch or blue cheese, and go in.
