Dr. Seuss thank you for this one, who knew green eggs and ham would be such a good combo!
Ingredients

2kg ham
-
water
-
2 carrots
-
1 onion, quartered
-
4 cloves garlic, smashed and skin removed

3 bay leaves
-
2 tbsp Dijon mustard

1/4 cup brown sugar
-
1/2 cup Wasabae
-
8 leaves basil
-
1/4 cup parsley
-
1/8 cup cilantro
-
4 sprigs mint
-
2 tbsp butter
-
3 eggs
-
salt
-
black pepper
-
1/4 tsp every ting scotchie
Directions
Defrost ham in your fridge the night before
Add your ham to a stock pot and fill it with water, enough to cover the ham
Add in your cut carrots, onion, garlic, garlic cloves
Cover and bring to a boil, 15 minutes per pound. So 30 minutes for our ham
While that’s going on a bowl combine, mustard, sugar and Wasabae, stir to combine
Preheat oven to 400F
When the ham has finished boiling, remove from the pot and into a baking dish, pat dry with paper towel, you can score your ham now. (I was lazy)
Drizzle on the glaze and pop that baby into the oven for 10-15 minutes
Remove from the oven and allow her to cool off for about 5-10 minutes before slicing 1/4” - 1/2” thick slices
Chop up all your herbs and set aside
Preheat your cast iron skillet over medium high heat, melt in butter and sear off your ham slices 3 minutes each side
Remove you ham, sprinkle in 1/2 of your chopped herbs and crack open your eggs over the herbs, salt black pepper and then the remaining herbs
The best part is now the herb butter you made so please don’t skip basting these beauties
Plate up you ham, then your eggs, a couple dashes of put every ting scotchie and you’re good to go!!
